Badanekayi Chutney / Brinjal Chutney



Ingredients :
  • Bili gundu badanekayi / Green round brinjal - 4
  • Grated coconut - 1/2 cup
  • Red chillies (Byadige) - 5-6
  • Mustard seeds - 1 tsp
  • Methi seeds - 4-5
  • Turmeric - 1/4 tsp
  • Asafoetida 
  • Salt to taste
  • Oil - 5-6 tsp
Method :  
  1. Cut brinjal into small cubes and add it in a cup of water in order to avoid brinjal turing black.
  2. Heat 2 tsp oil in a pan, add brinjal(drain water completely), add little turmeric and fry it for few minutes and cover it with a lid until brinjal is cooked properly and add grated coconut and fry it for a minute.
  3. Dry roast mustard,methi seeds and red chillies separately. (You can even prepare mustard and methi seeds powder and store it) 
  4. Gring fried brinjal , grated coconut , roasted mustard seeds , methi seeds (4-5), red chiilies, pinch of asafoetida and salt to taste with little water into fine paste.
  5. Heat  4 tsp oil , add mustard seeds and ground mixture , fry it for some time and brinjal chutney is ready to serve with hot rice and ghee.
  6. This chutney can be served with dosa , chapathi or roti also.
